ROASTED VEGETABLE PIZZA

 

 

1 quantity of easy no yeast pizza dough
(recipe below)

½ cup of tomato paste

1 punnet of cherry tomatoes

250g of Pantalica ricotta ½ cup of Pantalica grated parmesan

250g of prepared char grilled vegetables (available at supermarket delis)

1 cup of fresh basil leaves or rocket.

EASY NO YEAST PIZZA DOUGH

1 ½ cups of self raising flour

2 tbspns of olive oil

1 egg

Pinch of salt

1/2 cup of milk

 

Sift flour and salt in to a bowl and make a well in the centre. In another bowl whisk together egg, olive oil and milk and stir into flour.

Mix well to form a soft dough. Turn mix onto a floured board and knead lightly. Cut easy pizza dough into 4 pieces. Roll out four rounds and place on greased tray.

Spread tomato paste over 4 rounds leaving a 5 cm edge. Arrange marInated vegetables and halved cherry tomatoes and ricotta over bases and pinch around edge of pizzas to hold in topping.

Sprinkle with parmesan cheese and bake for in 200c oven for 15 - 20 mins or until crust is golden.

Remove from oven and scatter basil and or rocket leaves over pizzas.
