HONEY RICOTTA CHEESECAKE

 

 

1kg of Pantalica ricotta

3 tbspns of honey

1 tbspn of ground cinnamon

6 eggs

ΒΌ cup caster sugar

Zest of 1 orange

2/3 cup of sultanas

 

Preheat oven 165 degrees C.

Soak sultanas in masala for approximately 1 hour.

Beat sugar and eggs in a bowl for 5 minutes. Fold in drained sultanas, zest, ricotta and honey.

Pour mixture into well greased spring form pan and bake for approximately 75 mins in a moderate oven or until cake is firm to touch and golden.
